Fried Chicken with Salted Egg Sauce

We never had pot luck for a long time among A33 gals. Usually I was the only one lazy to cook and buy a roasted duck to the party, but this time, I was the only one who really cook a dish.

Everyone seems busy after since we come out to work. After years, some got promoted or carried high position and this has made us become even busier.

This time I insisted to cook because lately I like cooking (not so crazy about photography now, or I should say I have changed this craziness to a way to record my life using photo dairy).

The dish that I presented is Fried Chicken with Salted Egg Sauce... Not very difficult to cook, but the taste is really nice...

Ingredients:
2 chicken whole legs, cut into pieces
1 cup of oil for deep-frying

Marinade:
1/2 tsp salt
1/2 tsp sesame oil
Dash of pepper
1 tbsp water
1 tbsp corn flour
1 tbsp plain flour

Sauce:
2 salted egg yolks, steamed and mashed
1 tbsp curry leaf
1 tsp chopped chili padi
200ml evaporated milk

Seasoning:
1 tsp sugar
Dash of pepper

Method:
1. Mix chicken with marinade and marinate for 1 hour.
2. Heat up oil for deep-frying, deep-fry chicken until golden brown and cooked. Dish and drain.
3. Leave 1 tbsp oil in wok, stir-fry mashed salted egg yolks, curry leaves and chili padi until fragrant. Add in evaporated milk, seasoning and bring to boil.
4. Add in fried chicken and stir-fry until well mixed and the sauce has thickened.

p/s: Instead of chicken, you can use prawns to substitute.

Brownie

Sorry readers, cake again... hope you don't feel bored reading food/ recipe post in a photography blog.

Well, this time, I'm making brownie... compare the other type of cake, this is pretty expensive. I decided to make this for my friend's house warming party.

His house warming party was on Sunday, so, I made this on Saturday, because the book said, leave it overnight the taste will be better.

Right after I finished work on Saturday, I rushed back to buy ingredient. I mean, the brownie compare to other cake, the ingredients are relatively more expensive... Expensive is in the sense that, if the brownie didn't turn up to be what it was suppose to be, I'm wasting food...
End up, I'm a bit frustrated, because the cake turned up to be a bit disappointed. The middle part a bit watery whereas the outer layer already very hard. ~sign~ last time I was thinking maybe the oven that I have wasn't so good, so, spend thousands bought a better oven, but still getting the same result. Actually not that bad, just I'm expecting something better.

Ingredient A:
225g butter
200g chocolate chips

Ingredient B:
250g egg
200g caster sugar

Ingredient C:
150g plain flour, sifted with 5g baking powder
200g walnut, chopped and toasted

Ingredient for chocolate ganache cream:
185g dairy whipping cream
30g fresh milk
460g cooking chocolate, chopped

Method:
1. Chocolate ganache cream: Bring the whipping cream to boil then remove from heat. Add in cooking chocolate and fresh milk and stir until smooth. Allow it to cool.
2. Brownie: Cook butter until it melted, add in chocolate chips and mix well. (Do not melt chocolate chips completely, they should still in small chips form).
3. Beat Ingredient B until creamy. Add in butter chocolate mixture, plain flour, baking powder and half of the chopped walnut, mix gently by using hand.
4. Pour mixture into a 7" square baking mold, bake into a preheated oven at 180 degree Celsius, for 40 minutes or until cooked.
5. Remove cake and leave to cool. Spread the whole cake with chocolate ganache cream and sprinkle some chopped walnut and chocolate chips on top. Serve after the cream is set.

Note: The cake will be taste good if served at the next day.

Steamed Cakes

No oven to bake cake? Beh yao gin... my neighbor know we like to bake, so, when she bought this new recipe book, she lend it to my mom first.

Today is the only Saturday I'm free and available at home for these few weeks, I flipped through the book and found these 2 interesting recipe... easy and nice...

1. Steamed Moist Chocolate Cake

Ingredient A:
100g cocoa powder
250g castor sugar
1 tin evaporated milk
200g cooking oil
250g condensed milk

Ingredient B:
150g wheat flour
1 tsp soda bicarbonate
1 tsp baking powder
4 eggs B/ 3 eggs A

Method:
1. Combine all ingredient A and stir well.
2. Stir over heat for a while.
3. Beat egg in the mixture.
4. Fold in remaining sifted ingredient B.
5. Blend mixture with a mixer at low speed for a while until even.
6. Pour into container and steam for 1 hour.




Look good! Taste good!

2. Steamed Banana Chocolate Rice Cake

Ingredients:
250g butter
180g castor sugar
1 tbsp ovalet
4 eggs B/3 eggs A
1 tsp vanilla essence
275g superfine flour
1 tsp baking powder
1 tsp soda bicarbonate
250g banana
100g chocolate rice

Method:
1. Beat butter, sugar and ovalet until fluffy.
2. Fold in egg one by one.
3. Add in banana and mix till fine again.
4. Fold in sifted flour with soda and baking powder.
5. Finally add in chocolate rice.
6. Pour in batter into ring mould and steam for 1 hour.




The texture a bit loose, so, the look is a bit out, but taste good!

Worth trying... but make sure your house has enough gas to steam for 1 hour for each cake...

Hajime

Penny & I are planning to organize a speed dating event in August. So, we started with finding a suitable restaurant, high-graded but not too expensive... eh hem, this is not a tough job, because I know a few in KL, e.g. Rahsia, Basil Leaf, Hajime, Tamarine Spring... but at last, my partner and I both agreed that, Hajime suits our requirement the most...

Hajime has 4 private rooms upstairs, the biggest one can fit 20 people, the smallest one can fit 8 people. Hajime is a Japanese restaurant, the environment is very friendly and comfortable... and we believe, the ambiance can make us to be more open up...

After all, food have to be nice too! I dined in Hajime with Lingzie before, I think the lady's set plus 2 other side dishes are just nice for 2 person.

Last time when Lingzie and I visited Hajime, we ordered this as well, but the chefs are very creative, they change the item in the set every now and then.
In the set, there are 9 items, tempura, chawamushi, shashimi, sushi, soba...
